Have a question regarding diet and cardio ?

Recently worked very hard with daily cardio sessions several times a day to lose weight. Reached goal but also changed diet a bit. Played around with macros and it varies between more veggies/ fats some days and way more protein/fats minimal carbs other days. Here is my question:

I am so freaked that my body will gain all the weight back since there are days where I up the calories. The past three days I have had more meat than normal. At least two chicken breasts (one for lunch and one for dinner with a slice of boars head ham, some egg whites and some Kraft cheese). Then, I have a good spoonful of organic pb with some almonds. Other days I am content having salads for lunch ainner and find that the protein actually makes me feel sick. Therefore, I don't have much. On these days (regardless of diet) I still workout twice a day. I do 20-30 minutes twice a day on the nodrdatrack using the swinging arms. Those 20-30 minutes leave me dripping in sweat. Other days I do the spin bike for 40 minutes followed by core and resistance training then after dinner I do the nordatrack elliptical again for 20 minutes.
So even though I workout daily I feel like I am still eating bad since I crave more food on certain days. I try not to eat the meat or the nuts but I get hungry and find that I need a big meal of meat and veggies NOT just veggies.
Is it really bad and am I doing damage to my weight loss by eating meat (and more food) a few times a week? I feel like its the same as eating a bunch if brownies and cake. Trust me, I wish I could feel satisfied of just veggies but I can't on most days.
